You might have decided to prepare baked lobster at home, but you do not know the best way to kill a lobster. After all, most people boil their lobsters, which is a straightforward and simple way to both kill and cook the lobster! The pair of front claws of your lobster will be tied by some sort of rubber band when you buy them, and you need to make sure these rubber bands stay where they are. Place the lobster on the cutting board – facing away from your “cutting hand” – and fold the towel so that you can place it over the lobster’s eyes to keep it sedated. Once you have covered the towel over the lobster’s eyes, find the crease down the center of its back, and put the point of the knife on this line – up near the head. From this point on, everything is straightforward; simply drive the point downward and pull down the spine – toward the lobster’s tail. After you reach the tail, turn the lobster around and pull the knife back the other way – all the way through the lobster’s head. The lobster will experience a quick, painless death with that first plunge of the knife, and you will have a lobster that is cleaved into two perfect halves.
After this, all that is left is to rinse out the lobster’s insides in the sink, and then to simply follow the recipe in front of you!
